Ingredients
  

Base Ingredients

  • 2 cups almond flour or oat flour
  • 2 ripe bananas mashed (or ½ cup unsweetened applesauce)

Protein & Healthy Fats

  • 2 tablespoons ground flaxseed or chia seeds
  • ½ cup chopped walnuts almonds, or sunflower seeds

Natural Sweeteners & Flavor

  • ¼ cup maple syrup or coconut sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons cacao nibs

Optional Add-ins for Extra Nutrition

  • ¼ cup vegan dark chocolate chips
  • ½ cup blueberries shredded carrots, or zucchini

Instructions
 

Preheat & Prepare

  • Preheat the oven to 350°F (175°C).
  • Line a muffin tin with parchment liners or lightly grease it.

Mix Dry Ingredients

  • In a large bowl, whisk together the almond flour (or oat flour), baking powder, cinnamon, and ground flaxseed.

Blend Wet Ingredients

  • In a separate bowl, mash the bananas.
  • Stir in maple syrup and vanilla extract until well combined.

Combine & Bake

  • Gradually fold the wet ingredients into the dry mixture.
  • Gently mix in the optional add-ins, like chocolate chips or blueberries.
  • Divide the batter evenly into the muffin tin, filling each about three-quarters full.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Cool & Enjoy

  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
  • Serve warm or store for later.
